Fresh mango salsa
1 cucumber
1 habanero pepper
Half of a medium red onion
1 mango
1 lime
1 bunch of cilantro that you buy from the store that is already tied up
1. Cut the skin off the cucumber and discard. Cut the cucumber in half. Take only the seeds out and discard. Chop remaining cucumber into small squares or tri-angles and place in a large bowl.
2. Cut the habanero pepper in half and discard the seeds for a milder salsa. Keep some of the seeds in if you want a hotter salsa. Cut the pepper into small squares and place in the large bowl.
3. Chop the red onion into small pieces and place in large bowl.
4. Peel the mango and discard. Chop the mango into squares and place in large bowl.
5. Take the bunch of cilantro and chop into small pieces and place in large bowl.
6. Mix the salsa with a spoon. Take the lime and cut it in half. Remove seeds and squeeze the juice from both sides into the salsa and mix with a spoon afterwards. Place in the fridge until ready to serve with chips.
This is always a big hit at all the gatherings and parties that we have. I always have to make two batches because it goes so quick!
